What's the magic angle for the fronterons or leading edge slats?

Try looking at the angles on the F-18 (V4, V5, both?) as a starting point.

For TRAILING edge deflections (all number are approximate):
<15 degrees - Lots of additional lift/modest additional drag.
15 - 30 degrees - some additional lift/some additional drag.
>30 degrees - modest additional lift/lots of additional drag.

The leading edge slats on the RCP F-18 V4 are about 30 Deg, and the leading edge slats on the RCP SU-27 V5 are about 35 Deg.

I like 22-25 degrees for a good mix of speed and lift. On our FRCFoamies f18 and F22 we're at 22 degrees. On the Highlander I linked the flaps with the slats on the front and it was magical! But the RCP f18 really flew well at a higher angle. I also did the SU27 with the 22 degre flaps and it was reallt amazing!

After looking at Jay's Euro V5, it looks more like 40mm tapering down to 25mm at the wing tip.

First attempt at a Euro v5 with leading edge flaps. The flap design was ripped off Jay's Mig2.88. Bare airframe comes in at 99 grams.

Found this F35v2 flat packed when I was sorting through my depron circa 2013. Built it and added LE flaps. Came in a bit lighter than my original with the bare airframe only 180g. Cannot wait to fly it but the weather is terrible in the UK at the moment.
